Culinary Arts II builds on concepts presented in Culinary Arts I to provide expanded experiences in food production, management, and service. Topics include food safety and sanitation, foodservice operations, advanced food production, and international, regional, and cultural cuisine. Skills in mathematics, communication, creative thinking, and entrepreneurship are reinforced in this course. This course requires a fully-equipped, school-based commercial kitchen with food service and dining areas. Career and Technical Student Organizations are integral, co-curricular components of each career and technical education course. These organizations enhance classroom instruction while helping students develop leadership abilities, expand workplace-readiness skills, and access opportunities for personal and professional growth. Students in the Hospitality and Tourism cluster affiliate with FCCLA.
